Fruit and nut flapjacks

My all time favourite! Very easy to adapt to suit your preferences - for example choose your choice of nuts and fruit (or opt to eliminate one and have more of the other!) and decorate as desired. I like mine with a drizzle of milk chocolate!
This recipe is for a 9 x 13 tin. If you have a 8 x 8, simply half the mixture.

INGREDIENTS
350g fine rolled oats
80g plain flour (optional)
100g butter
175g golden syrup
50g golden caster sugar
120g demerera or light brown sugar
200g dried mixed fruit (I used raisins, sultanas and cranberries)
100g mixed chopped nuts (I used cashews, hazelnuts, walnuts & almonds)
50g mixed seeds (Sunflower seeds are good!)
Optional: A few cubes of milk chocolate
METHOD
Step 1] Preheat oven to 160 C fan and line a 9 x 13 tray with baking paper
Step 2] In a large bowl mix the oats, flour, nuts, fruit and seeds using a wooden spoon until thoroughly combined.
Step 3] Over a low heat, gently melt together the golden syrup, butter, and sugar. Stir often.
Step 4] Pour the melted mixture into the flour mixture and stir until combined. You do not want any "dry" parts so keep mixing!
Step 5] Place the mixture into the tin and flatten down, ensuring that all corners of the tin are filled.
Step 6] Bake for 20-30 minutes, until brown around the edges.
Step 7] Leave to cool fully before using a sharp knife to slice.
Step 8] Decorate as desired e.g. with some melted chocolate, or leave as they are!
